Vanilla Extract, Flavor, Concentrates: What are the Differences?
Vanilla Extract--Standard of Identity (21CFR169.175)
A pure vanilla extract must contain the extractive matter from 13.35 ounces of vanilla beans at 25% moisture per fold, per U.S. gallon with a minimum ethanol content of 35%.
Vanilla Flavor
Conforms to the same standard of identity as vanilla extract except that the ethanol content is less than 35%.
Concentrated Vanilla
Conforms to the same standard of identity as vanilla extract except it is concentrated or "folded" to remove part of the solvent. i.e. for a "2 fold" extract, each gallon would contain twice the vanilla constituents as its single fold vanilla. Folds are expressed in whole units only.
